Julie’s Crunchy Romaine Salad
1 head Romaine lettuce, washed, patted or spun dry, and torn/chopped
1 bunch fresh broccoli, coarsely chopped
4 green onions, chopped (green and white parts)
1 cup chopped pecans
1 pkg beef flavor Ramen noodles (raw), broken up
4 T butter
Sauté nuts, ramen noodles, and flavor packet in melted butter in medium saucepan until toasty and well coated. Set aside to cool. Combine and toss all in a big bowl until well mixed. Toss with dressing just before serving. Enjoy!
Dressing
½ cup plus a bit more sugar
½ cup vegetable oil
¼ cup plus a few extra shakes red wine vinegar
1½ tsp plus a few extra shakes soy sauce
salt and pepper to taste
Mix ingredients well (I use an old jam jar and shake well, or you could whisk in a bowl). Add a bit more of all except oil until it tastes perfect.
